Asian Quinoa Salad & Tacos

I’ve made these white bean tacos before (actually, I’ve made them a lot!) . . . so check out the recipe here:

I always try to mix up the sides I serve with tacos so the meal doesn’t get boring (if that’s even possible to get bored with tacos), so this time I decided to try an Asian Quinoa Salad. Enjoy!


Ingredients – For The Slaw:

-1 8 oz bag shredded red cabbage, about 4 cups

-1 Cup cooked quinoa

-2 Cups shredded carrots

-2/3 Cup thinly sliced green onion, or shallots

-1/2 Cup slivered or sliced almonds, toasted

-2 Tablespoons sesame seeds

-Asian Vinaigrette (see below)

Directions – For The Slaw:

-Cook quinoa according to package instructions

-Toast almonds in the oven at 350 degrees farenheit for 7 – 9 minutes


-Toss all ingredients together until combined. Serve immediately, or refrigerate in a sealed container


Ingredients – For The Asian Vinaigrette:

-1/3 Cup oil of your choice

-3 Tablespoons rice wine vinegar

-1 Tablespoon Agave (not Honey! Honey is not Vegan)

-1 teaspoon tamari — the Gluten Free version of soy sauce

-1/8 teaspoon sesame oil

-Salt and pepper to taste

Directions – For The Asian Vinaigrette:

-Whisk all ingredients together until combined

This Micro Mama’s spicy kimchi is life changing. I swear. Now that I am writing this post I’m probably going to have to make tacos again this week because I LOVE putting that stuff on them! Plus fermented vegetables are really good for you! Here is some info I pulled from their website:

So I recently discovered some things about the gum/mints I had been purchasing/using that I wanted to share with you all. I had not realized mostly every gum/mint sold has aspartame in them. Currently, aspartame is found in more than 6,000 products and is consumed by over 200 million people around the world, which is terrible because aspartame is not good for you. Aspartame has been reported to cause many health problems, including cancer.

Another thing I discovered in Altoids and many other breath fresheners: Gelatin. Gelatin is made from animal by products, and being a vegan, this disgusts me. I immediately threw away my brand new pack of Altoids! I found a paragraph on that definitely solidified my thoughts on it:

“There is some concern about the safety of gelatin because it comes from animal sources. Some people are worried that unsafe manufacturing practices might lead to contamination of gelatin products with diseased animal tissues including those that might transmit mad cow disease (bovine spongiform encephalopathy). Although this risk seems to be low, many experts advise against using animal-derived supplements like gelatin.”

Exactly why I am Vegan! It’s fun to me to get educated on all this food/health stuff.

I have found two different gum brands that are Vegan, aspartame free, and also offer sugar free options! Glee Gum and B Fresh Gum. I can only find them at small markets and health food stores, so if you see these brands, try them out πŸ™‚

(I also had to throw away some vitamins because they too had gelatin in them. Gelatin is often used to create the capsule that goes around the vitamin. I have started making the switch to have everything in my life Vegan including vitmains and beauty products)
