Back in May I posted our breakfast ‘Strawberry Banana Overnight Oats‘ and since then we have literally ate that every single morning! We both love the oats but I wanted to try something new for breakfast. These Acai Booster Bowls are a great way to start your day…lots of protein, flavor, and surprisingly really filling. Super easy to make so this is also a perfect summer breakfast 🙂
Ingredients:
-1 Cup chopped frozen mango
-1 Cup chopped frozen pineapple
-1 packet frozen acas puree
-1 Cup baby spinach
-1/2 kiwi, peeled
-1/2 Cup almond milk
Toppings:
-Banana (1/2 or 1/4)
-Blueberries
-Blackberries
-2 teaspoons chia seeds
-1 Tablespoon slivered almonds
-Shredded coconut
Directions:
-Place all ingredients, minus the toppings, in a blender and blend until smooth
-Pour into a serving bowl and top with fresh fruit, nuts, & seeds as desired. Serve immediately
