I have a love/hate relationship with cooking in other people’s kitchens! It is definitely a pain to bring all of the ingredients/spices/etc along with me, but it may be even harder to locate where everything is in someone else’s kitchen. However, I do love pretending these gorgeous kitchens are mine . . . and I am envious of their plates (ha!). That being said . . . is this kitchen goals or what?!
I loved the way this Tofu came out. I feel like I never make stir fry the same way twice! It’s always fun to experiment with different Tofu/Tempeh recipes, the vegetables I use, and then choosing between noodles or rice . . . (and like I’ve said before, you can always use this Tofu recipe for other dishes!)
For this stir fry I used the usual vegetable suspects . . . broccoli, asparagus, pepper, (purple) carrots, celery, zucchini, summer squash, and onion.
Ingredients – Sesame Tofu:
-1 block firm or extra firm tofu, drained
-2 Tablespoons Tamari
-4 Tablespoons Agave
-Black pepper to taste
-1 Tablespoon rice wine vinegar
-1 teaspoon sesame oil
-2 teaspoons corn starch
-2 Tablespoons sesame seeds
-3 green onions, chopped
^Side note, how GIANT is this zucchini! It came from my boss’s garden. I can’t wait to have a garden of my own someday ❤
-Preheat oven to 375 degrees Fahrenheit. Line baking dish with coconut oil
-In a medium bowl, stir together 1 Tablespoon Tamari, 3 Tablespoons Agave, pepper, rice wine vinegar, & oil. Cut tofu into 1/2″ cubes. Gently add tofu cubes into sauce. Cover & marinade for 15 minutes
-Place tofu in baking dish (or baking sheet) in a single layer (reserve marinade). Spray tops of tofu with oil & bake for 20 minutes. Flip tofu & bake until it turns golden brown, about 20 minutes more
-Add additional Tamari & Agave (1 Tablespoon each) to the marinade bowl. Add corn starch & whisk to combine
-In a large skillet over medium – high heat add the marinade. Place the tofu cubes into the skillet as well & stir to coat. Bring the sauce up to a quick boil, then reduce heat to a low simmer. After a few minutes the sauce will thicken, stir to coat tofu
-Sprinkle with sesame seeds & green onion & serve immediately
Cook the rice to package directions, & stir – fry the vegetables.
To assemble the bowls: add the rice, vegetables, & then top with the sesame tofu & marinade
