Happy Wednesday! This Wednesday is especially happy because today is mine and Sean’s 1 year anniversary ❤ ❤ ❤ Tonight I am making him one of his favorites, my pot pie & mashed potatoes, and then we are going to go out for some drinks on the water . . . can’t wait!
Ok, let me just get back on track here…because this Spicy Peanut Butter Tofu with Fried Rice was probably one of my favorite recipes I have ever made! I’m serious. Now that I am adding the recipe to Vega Table, I’m craving it again and will most likely be making this again next week!
Ingredients – Spicy Peanut Butter Tofu:
-14 – 16 oz firm or extra firm tofu
-1 Tablespoon peanut oil
-Several large garlic cloves, sliced
-1.5 teaspoons ground ginger
-Green onions, sliced (for the garnish)
Sauce Ingredients:
-3 Tablespoons Tamrai
-3 Tablespoons Rice Vinegar
-2 Tablespoons smooth natural peanut butter
-1 Tablespoon agave nectar
-2 Tablespoons water
-1 Tablespoon Sriracha –more or less to taste–
Directions:
-Drain the tofu. Put the tofu pieces between a double layer of paper towels & place a plate on top so the liquid in the tofu is absorbed by the towel (the longer you can do this step for, the better)
-Cut the tofu into lengthwise strips, about 1″ wide
-Whisk together the tamarin, rice vinegar, peanut butter, agave, water, siracha, & ground ginger
-Chop green onion & garlic
-Heat heavy pan over high heat for 1 minute, then add the peanut oil & heat for about 30 seconds more. Add the garlic & cook just until they are fragrant, about 30 seconds
-Add the tofu pieces, lower heat to medium & cook until the tofu is lightly browned on both sides, about 3 – 4 minutes each side. Feel free to cook longer on each side for more crispy tofu
-When all the tofu pieces are browned, add the sauce, turn the heat to low & cook just until the sauce thickens slightly & coats the tofu — I added the sauce and removed the pan from heat because I do not like the sauce to be thick —
-Remove pan from heat (if you haven’t done so already), transfer tofu pieces to plate & pour sauce over & garnish with green onion. Serve hot — I doubled this entire recipe & it worked perfectly. This would definitely qualify as a great meal to serve at dinner parties —
Ingredients – Fried Rice:
-Rice of your choice
-Oil
-desired amount of Carrots, diced
-Frozen peas
-1 onion, chopped
-Salt to taste
-1 teaspoon turmeric
-1 Tablespoon nutritional yeast
Directions:
-Cook rice to package instructions
-Add oil to a pan & bring to medium heat. Add carrots, peas, & onion & cook (covered), about 10 minutes
-Remove cover & add turmeric & salt
-Cook an additional 10 minutes
-Add nutritional yeast & stir until full combined
-One tip I have is to add a little bit of coconut milk if the mixture seems too dry!
-Remove from heat
-When the rice is finished, add vegetable mix & stir until all ingredients are combined
