Cream of Broccoli Soup

Happy first day of Fall! I have to admit, I really did not want to let go of summer, but I find myself getting more and more excited (and ready!) for Fall every time the temperature drops ❤

I have a feeling I’m going to be making lots of soups this season, so it’s only fitting that I post one today. This specific Cream of Broccoli recipe has very few ingredients, is super easy to make, and delicious.

 Broccoli has always been one of my favorite vegetables, and with this recipe you can blend it to reach the consistency you like . . . I blend mine up pretty well but still love to find bigger chunks of broccoli in my bowl 🙂

-3/4 Cup raw cashews

-2 teaspoons extra virgin olive oil

-2 medium onions, diced

-2 stalks celery, chopped

-3 carrots, chopped — I love using different color carrots! My soup came out more of a purple color instead of green because of it. Feel free to use regular orange ones —

-3 cloves garlic, minced

-16 oz broccoli, about 7 cups, chopped

-Pepper to taste

-Place cashews in a bowl & cover with water. Soak for at least 30 minutes, or overnight

-Add oil to a large pot over medium – high heat. Once hot, add onion & sauté for about 3 minutes. Add celery & carrots & sauté for another 5 minutes. Add garlic & broccoli & sauté for 5 minutes more

-Add 5 Cups water & pepper to taste. Stir & bring to boil. Once boiling, reduce heat to low & simmer, covered, for about 15 minutes

-Drain cashews & place in food processor along with 1 C water. Blend until very smooth & creamy, there should be no clumps. Set aside

-Puree soup using immersion blender

-Once soup is pureed, stir in cashew cream. Add additional pepper if desired



I served this soup with my Roasted Vegetable Salad with Avocado Dressing (one of my favorite salads of all time)
