Vodka Sauce

You guysssss!!! This Vodka Sauce was amazing! I have always been a big fan of vodka sauce and the homemade version is always better than a $10 store bought jar ❤ Plus I got to use the leftover vodka for martinis 😉

I love Tito’s vodka because it is also Gluten Free!

This is definitely a must try recipe . . . quick, easy, and delicious 



-1 Cup raw cashews, soaked in water for 4 – 8 hours & then drained

-1 Cup water

-2 Tablespoons olive oil

-1 large onion, diced

-5 garlic cloves, minced

-28 oz can crushed tomatoes

-28 oz can diced tomatoes

-1 Cup vodka

-1/2 teaspoon salt

-Generous amount of black pepper

-Desired amount of fresh basil and/or parsley, finely chopped


-Blend cashews & 1 C water in food processor until smooth. Set aside

-Heat oil in a large saucepan or stockpot over medium heat & add onion. Saute for about 5 minutes, until softened

-Stir in the crushed tomato, diced tomato, & vodka. Bring to a simmer & reduce heat to medium – low. Continue simmering for about 5 minutes until sauce thickens a bit & the alcohol has cooked off


-Stir salt, pepper, & cashew mixture into sauce & bring back to a simmer, just for a minute, until heated through

-Remove from heat & stir in basil and/or parsley

-Serve warm over pasta of choice


I also served mine with my homemade chickpea meatballs & steamed broccolini
