My final Thanksgiving recipe! Green bean casserole has always been one of my favorite dishes on Thanksgiving – there was no way it wasn’t making its way onto the vegan menu this year. Honestly, I think this recipe is way better than any other ones I’ve ever had/made . . . very pleased with how it came out!
Ingredients
-1/2 Cup raw cashews, soaked overnight or for at least 4 hours
1/2 Cup almond milk, or water
-2 medium onions, thinly sliced
-3 Tablespoons breadcrumbs
-3 Tablespoons flour
-2 lbs (frozen) cut green beans
-1 Tablespoon oil
-1 medium onion, diced
-3 cloves garlic, minced
-2 8 oz packages of mushrooms, chopped
-1/8 teaspoon nutmeg
-1 Tablespoon tamari
-1/4 Cup white wine
-Pepper to taste
Directions
-Place cashews in a bowl & cover with water. Soak for at least 4 hours & up to overnight
-Blend soaked cashews with almond milk in food processor until completely smooth & creamy. Set aside
-Preheat oven to 475°F
-Place two sliced onions, bread crumbs, & flour in a bowl, tossing to combine. Be sure to separate each individual onion piece. Spread onions in an even layer on baking sheet sprayed with cooking spray or lined with non stick paper/foil. Spray onions once again with cooking spray
-Bake for 25 minutes, tossing halfway through. Once onions are done cooking, remove from oven & lower heat to 350°F for the casserole
-Bring a large pot with 2 inches water to a boil. Once boiling, add green beans. Bring back to a boil & cook over medium heat for about 5 minutes, or until tender. Drain & run cold water over green beans to stop cooking. Set aside
-In a large skillet, heat olive oil over medium heat. Once hot, add onion. Cook for 5 minutes & then add garlic & mushrooms. Cook for another 10 minutes, stirring often. Add nutmeg, tamari, white wine, & black pepper. Simmer for about 5 minutes
-Stir in cashew cream & 1/4 of the baked onions. Stir in cooked green beans
-Spread mixture into a large casserole dish. Top with remains baked onions. Bake, uncovered, for 20 minutes
