This Spicy Sushi Bowl is definitely worthy of my first post of 2017 . . . I can’t believe I haven’t shared this yet! This was one of my favorite lunches I meal prepped a few months back . . . the flavors were so different than what I usually eat for lunch, it made for a nice change.
I used to absolutely love eating sushi, and spicy tuna was one of my favorites. The Spicy Mayo I used for this bowl was so good I was happy that I no longer had to miss sushi . . . or the spicy mayo ❤ Give this recipe a try if you want to spice up your menu from time to time!
Ingredients – Spicy Mayo
-12 oz soft silken tofu (I bought the wrong kind – oops!)
-1/4 Cup rice vinegar
-1/4 Cup sesame oil
-3 Tablespoons sriracha hot sauce
-1/4 teaspoon garlic powder
-1/2 teaspoon agave nectar
Ingredients – Sushi Bowl
-1 Cup sushi rice
-2 Cups water
-1 Tablespoon rice vinegar
-2 sheets of nori seaweed cut into strips
-4 oz (or desired amount) cucumber, julienned
-6 oz radish, julienned
-6 oz mango, peeled, seeded, & thinly sliced (I substituted for raw coleslaw instead – SO good)
-1 Cup diced avocado
-1 Cup edamame, steamed & removed from pods
-1 – 3 Tablespoons bread crumbs, toasted
-1 Tablespoon sesame seeds, toasted
Directions:
-To make the Spicy Mayo : place all of the ingredients in a food processor & puree until completely smooth. Transfer the mayo to a jar or squeeze bottle & store in the refrigerator for up to 3 weeks -> the recipe makes more than you will need for the sushi bowls
-To make the Sushi Bowl: place the sushi rice, water, & rice vinegar in a pot over medium – low heat, partially cover, & bring to a boil. Lower the heat & simmer for 20 – 25 minutes until the rice is soft, but not mushy. Fluff with a wooden spoon. Divide the nori strips among four bowls, crisscrossing them. Divide the cooked rice among the bowls, as well as the cucumber, radish, mango, avocado, & edamame. Combine the bread crumbs & sesame seeds in a small bowl & then sprinkle over each bowl. Finish each bowl with a drizzle of spicy mayo. Serve immediately
