Tofu & Potato Goulash

Short and sweet post today ❤ I really enjoyed this version of goulash! There was a distinct smoky flavor to it that made this meal stand out to me as super flavorful. To make it more of a balanced dish I added corn, carrots, and broccoli. Enjoy!

-2.5 Cups potatoes – about 6 medium sized – diced

-1 onion, diced

-5 garlic cloves, minced

-3 – 5 teaspoons paprika

-1/2 teaspoon salt

-1 teaspoon oil

-8 oz smoked tofu – our market did not have smoked tofu so I added 1 Tablespoon of liquid smoke to the tofu pictured above –

-2.5 Cups water

-1 teaspoon majoram

-1 Tablespoon tomato paste

-Optional : corn, diced carrots, broccoli

-Dice the onion & mince the garlic. Wash, peel if desired, & cut potatoes into small cubes. Dice the smoked tofu

-Heat the oil in a large skillet or pot & add the onion & minced garlic

-When the onion & garlic are starting to brown, add the potato cubes, smoked tofu, paprika, liquid smoke, & give it a good mix

-Let it roast for about 2 – 3 minutes, then add 2.5 Cups of water. If using vegetables, add now

-Let it cook without the lid on for about 30 – 45 minutes on medium – high heat, the water will reduce itself. If the goulash is getting too thick, you can add more water again until the potatoes are soft & the goulash has reached the preferred consistency

-Add the salt, marjoram, & tomato paste, & story until the tomato paste dissolves
