Carmelized Onion Dip

Only two more weeks until the Super Bowl! I’m so glad I’ve already made this dip because this will definitely be going on the menu for the big game! The recipe makes a lot, so it’s perfect if you plan on going to a big party. Don’t tell anyone it’s vegan until it’s all gone and then surprise them 😉 I have to be cliche and say that this dip will be a touchdown at any super bowl party you attend.



-3 yellow onions, diced

-2 shallots, thinly sliced

-1 – 2 Tablespoons extra virgin olive oil

-2 teaspoons thyme

-3/4 Cup raw cashews, soaked for 20 minutes in hot water

-2 Cups silken tofu *make sure it’s silken!*

-2 Tablespoons fresh lemon juice

-2 teaspoons Better Than Bouillon vegetable base

-1 teaspoon garlic powder

-1/4 teaspoon ground black pepper

-2 Tablespoons green onion, finely chopped


-Allow raw cashews to soak in boiling hot water for 20 minutes. This will soften them & allow them to blend easily. You can also leave them soaking in water overnight in the fridge

-In a large pan over medium heat, saute the onion with 1 Tablespoon olive oil for about 14 – 16 minutes. Then add the shallots, thyme, & another Tablespoon of olive oil if the pan seems dry. Continue to caramelize, stirring occasionally, for another 14 – 16 minutes until the mixture is a deep golden brown


-Meanwhile, rinse the cashews from the soaking water & drain well. Then add them to your food processor, along with tofu, lemon juice, better than bouillon base, garlic powder, & ground black pepper. Blend on high until very smooth

-Once the onions & shallots are carmelized, reserve about 1/4 Cup of the mixture for the top of the dip. Then portion out half of what is left & add it to the food processor with the rest of the ingredients. Blend again until smooth. Transfer mixture into a large bowl

-Roughly chop the remaining half of the onion/shallow mixture & then fold it into the bowl with the other dip ingredients, along with finely chopped green onion

-Cover & refrigerate for at least 2 hours before serving

-Serve with your favorite chips, crackers, & vegetables
