Good morning everyone! I am feeling so refreshed after having a really fantastic four days off. I did lots of cleaning, cooking, sleeping, reading, and spending quality time with my love. On Saturday I planned our valentines day celebration; couples massages followed by an ‘urban sweat’ session (check it out here), and then we tried a new vegan restaurant I had been wanting to go to!
Yesterday I meal prepped for the (short) week ahead and made these Apple Oatmeal Muffins for Sean’s breakfast. I did try one and they were really good! The batter recipe calls for a lot of sugar but I left it out ❤
Ingredients – Apples
-1 apple, peeled & chopped into 1/4″ cubes
-1 Tablespoon brown sugar
-1 teaspoon cinnamon
Ingredients – Batter
-1 Cup all purpose flour
-1/4 Cup whole wheat flour
-1/2 Cup rolled oats
-1/2 Cup light brown sugar
-1/4 Cup granulated sugar
-2 teaspoons baking powder
-1/2 teaspoon baking soda
-Pink himalayan salt
-1/3 Cup vegetable oil
-1/2 Cup apple sauce
-1/3 Cup apple cider or non dairy milk
Directions:
-Preheat oven to 375°F. Grease muffin cups with coconut oil or line with muffin liners
-In a small saucepan, sauté the apple, brown sugar, & cinnamon for about 5 minutes over medium heat. The apple should begin to soften & caramelize slightly. Remove from heat & set aside
-Stir together flours, oats, brown sugar, white sugar, salt, baking powder, & baking soda in a mixing bowl. Add in the apple sauce, vegetable oil, & cider or milk. Stir until just moistened. Fold in sautéed apples. Fill muffin cups 3/4 full
-Bake for about 18 minutes, or until a toothpick comes out clean
