I finally got to cook with jackfruit! I have seen so many vegan recipes using jackfruit and had been wanting to cook it for so long! I found it pre spiced and decided to make a jambalaya with it. I loved this meal . . . loved it, loved it, loved it. A little spicy, a little, sweet, and super tasty. I served this with kale chips ❤ I hope one day I get to use the real jackfruit and not a prepackaged one!
*I doubled the recipe*
Ingredients
-1 Cup brown rice
-1 Cup vegetable broth
-1 container jackfruit, drained
-1/2 head of cauliflower, chopped into florets
-3 celery sticks, chopped
-2 Tablespoons tomato paste
-4 cloves garlic, minced
-2 teaspoons parsley
-2 teaspoons basil
-2 teaspoons oregano
-2 teaspoons cayenne pepper
Directions
-Bring a large pot of water to a boil. Add the rice & simmer for 20 minutes
-Transfer the rice to your slow cooker. Add all of the other ingredients & stir a few times to mix well
-Cook in the slow cooker on low for 8 hours or high for 4 hours
-Use two forks to shred the jackfruit & add salt & pepper to taste
*I did not use a slow cooker & cooked everything on the stove until everything was cooked through & warm*
