Another Oh She Glows recipe! I had to share this one, I’ve made it twice in the past two weeks! The tahini sauce is to die for . . . you guys gotta make this one, so easy and so nutritious, you will love it ❤ I added avocado and hemp hearts to this dish as well
Ingredients – Lemon Tahini Dressing
-1/4 Cup tahini
-1 large clove garlic
-1/2 Cup fresh lemon juice, from about 2 lemons
-1/4 Cup nutritional yeast
-2 – 3 Tablespoons extra virgin olive oil
-1/2 teaspoon pink himalayan salt
-Freshly ground black pepper
Ingredients – Lentil Mixture
-1 Cup lentils
-1 Cup spelt berries or wheat berries, soaked overnight. *Or use millet, quinoa, rice*
-1 1/2 teaspoons extra virgin olive oil
-1 small red onion, chopped
-3 cloves garlic, minced
-1 red bell pepper, chopped
-1 large tomato, chopped
-3 Cups spinach or lacinato kale, roughly chopped
-1/2 Cup fresh parsley leaves
Directions
-Make the Lemon Tahini Dressing: In a good processor, combine the tahini, garlic, lemon juice, nutritional yeast, extra virgin olive oil, 1/2 teaspoon salt, & black pepper & process until smooth. Set aside until ready to use
-Cook the lentils according to package instructions. Set aside
-Cook the spelt berries according to package instructions. Set aside
-In a large skillet, heat the olive oil over medium heat. Add the onion & garlic & sauté for a few minutes, until the onion is translucent
-Add the bell pepper & tomato & sauté for 7 – 8 minutes more, until most of the liquid has cooked off
-Stir in the spinach & sauté for a few minutes more, until the green wilt
-Stir in all of the Lemon Tahini Dressing & the cooked lentils & spelt berries. Reduce the heat to low & simmer for a few minutes more. Remove from the heat & stir in the minced parsley
-Season with salt & black pepper to taste
