Sharing our New Years Eve Dinner recipes! Honestly, we stayed in this year and it was probably my favorite New Years Eve to date. We had just gotten some new furniture delivered on Friday (aka a new couch that we are completely obsessed with), and we just felt like staying home ❤ The next three months are going to be crazy busy, so I think hibernating as much as possible is in the cards for us whenever we can get it.
Roasted Mushrooms, Roasted Brussel Sprouts with Coconut Bacon, & Risotto with peas and broccoli. Risotto is always time consuming, but sooooo worth it. Sharing the Roasted Brussel Sprouts recipe tomorrow!
Ingredients
-2 pounds mushrooms
-1 Tablespoon extra virgin olive oil
-3 Tablespoons balsamic vinegar
-2 Tablespoons tamari
-3 cloves garlic, chopped
-1/2 teaspoon thyme
-Pink himalayan salt & black pepper to taste
Directions
-Preheat the oven to 400°F
-Toss the mushrooms in the oil, vinegar, tamari, garlic, thyme, salt, & pepper, making sure mushrooms are evenly coated
-Arrange mushrooms in a single layer on a baking pan & roast in the oven until mushrooms are tender, about 20 minutes, mixing halfway through
