Soup and salad is such a simple combo, but it one of my top 3 things to make/eat for dinner. One of our favorite salads is my Creamy Hemp Cesar Salad, but after eating that 3 million times, I wanted to switch it up . . . just a little.
This Almond Cesar Salad comes from Thug Kitchen, and I served it with Vegan Stew this time around . This would also make for a nice dinner side, or serve it to hungry guests while you get their entrees together!
Ingredients
-1/3 Cup sliced or slivered almonds
-1/3 Cup hot water
-1 – 2 cloves garlic
-1/4 Cup extra virgin olive oil
-2 Tablespoons lemon juice
-1 teaspoon dijon mustard
-1 teaspoon rice vinegar
-1 head of your favorite lettuce, chopped up
Directions
-Put the almonds in a glass with the hot water & let them soak for about 15 minutes
-Chop up the garlic
-When the almonds start feeling soft. throw them in your food processor with the water they soaked in, the garlic, olive oil, lemon juice, mustard, & vinegar. Blend it up until there are no more large almond pieces & it starts to look creamy
-Chill the dressing until you are ready to eat
-Serve a couple of tablespoons of dressing over your favorite lettuce
-Optional toppings: cucumber, garbanzo beans, hemp seeds
