Roasted Sriracha Cauliflower Bites

Three days until Super Bowl Sunday! Such a great excuse to eat unhealthy (but really tasty) food, sip champagne, and pretend Monday doesn’t exist. I hope the Pats win . . . I’m not necessarily a Patriots fan, but I’m rooting for them . . . I am a New Englander after all. And it will be Sean’s best year ever if his team wins and he gets to marry me 😉

I think these Thug Kitchen Sriracha Cauliflower Bites will be on the menu, along with Sean’s Bean Dip, and maybe a new Mac & Cheeze recipe. I got an air fryer as one of our wedding gifts and I’m SO excited to try it out. I think I’m going to try putting the cauliflower in there to crisp it up, I never achieve that with baking!

I served these with my Homemade Ranch Dressing  ❤

What’s everyone else making this weekend?!

Ingredients – Cauliflower

-2 medium heads cauliflower

-1/2 Cup flour

-1/2 Cup hot water

Ingredients – Hot Sauce

-2 teaspoons extra virgin olive oil

-1/2 – 3/4 Cup Sriracha or similar style hot sauce

-1/4 Cup rice vinegar

-1/2 teaspoon tamari

-Preheat the oven to 450°F. Lightly grease a rimmed baking sheet. Chop up the cauliflower into bite sized pieces

-Whisk together the flour & water in a big bowl until a batter forms with no chunks. Toss in the cauliflower & mix it around until all of the pieces look a little coated. Spread the cauliflower out on the baking sheet & roast for 15 minutes. Mix the cauliflower around halfway through roasting

-Make the hot sauce. In a small saucepan, mix the oil, sriracha, vinegar, & tamari. Heat over low heat until the sauce is warm but not bubbling. Turn off the heat & set aside

-When the cauliflower is done, place it back into a large bowl & toss it with the hot sauce mixture from the stovetop. Make sure all of the cauliflower is coated. Now put the cauliflower bake on the baking sheet, leaving the extra hot sauce in the bowl, & roast for another 3 minutes so everything is warm

-Serve hot or at room temperature
