BBQ Lentil Stuffed Sweet Potatoes

Out of all the new recipes I’ve posted lately, this one is definitely one of my favorites. Super healthy, lots of protein, and very filling. This is one of those recipes that you and your man will love – I promise! And, you know that I have been making everything on my own lately – hummus, sauces, juice, etc – and I was blown away by the Homemade BBQ Sauce recipe I’m sharing below. Add this to the ‘Perfect Weeknight Meals’ list. I served these with Homemade Kale Chips

Ingredients – Sweet Potatoes

-5 – 6 medium sweet potatoes

-1 small zucchini, chopped

-Spinach, desired amount – I used a lot, per usual

-1 Cup dry lentils

-2 teaspoons extra virgin olive oil

-1 medium yellow onion, chopped

-1 Cup carrot, chopped

-3 cloves garlic, minced

-1 batch BBQ Sauce (see below) or 1 Cup store bought

Ingredients – Avocado Sauce

at least double this recipe, you’re gonna need it!

-1/2 avocado

-1/3 Cup unsweetened almond milk

-1/2 teaspoon hot sauce (I used Frank’s)

-1/2 teaspoon pink himalayan salt

-1/4 teaspoon onion powder

-1/4 teaspoon garlic powder

-1/4 teaspoon black pepper


-Preheat oven to 400°F. Arrange potatoes in a large glass baking dish. Prick each potato a few times with a knife or fork. Rub with olive oil & pink himalayan salt & pepper to taste. Bake for 50 – 60 minutes, until tender when pierced with a fork

-In a large pot, add 3 Cups water & bring to a boil. Add lentils, bring water back to a boil. Reduce heat to simmer, cover, & cook for 15 – 20 minutes, until lentils are tender. Remove lentils from the pot & set aside

-In the same pot over medium heat, warm oil. Add chopped onion, carrot, & zucchini, & cook for 5 – 7 minutes, until tender. Add garlic & cook 1 minute more

-Add all of the BBQ Sauce ingredients into the pot & stir until all of the veggies are coated.
Now add your spinach. Bring to a boil, cover, & reduce to simmer for 10 – 12 minutes

-Add the lentils to the sauce, stir to combine

-In a food processor, add avocado, milk, hot sauce, onion powder, garlic powder, s & p

-Slice the potatoes down the middle. Spoon lentil filling into each sweet potato & top with avocado sauce

Ingredients – BBQ Sauce

-6 oz can tomato paste

-1 Cup water

-3 Tablespoons apple cider vinegar

-2 Tablespoons maple syrup

-2 Tablespoons apple sauce

-1 1/2 teaspoons garlic powder

-1 1/2 teaspoons onion powder

-1 teaspoon yellow mustard

-1 teaspoon pink himalayan salt

-1 1/2 teaspoons black pepper

-1/2 teaspoon paprika

-1/2 teaspoon cayenne pepper


-In a small saucepan over medium – high heat, place all ingredients. Whisk to combine

-When it begins to bubble, cover

-Turn the heat down to low & let the sauce simmer for 10 – 15 minutes, stirring once or twice. Add more water if the sauce gets too thick

-Store in a glass jar or airtight container
