The Best Shredded Kale Salad

I had such a fun afternoon hosting a ladies luncheon at my house with an old friend, and a new (vegan!) friend. They’re both professional models and both stunning . . . it was good to catch up and just chat and eat yummy food made by yours truly.

I’ve been meaning to share this salad with y’all for such a long time now . . . I’ve made it about 3 million times (I think it’s my favorite, I even made it for my bridal shower back in January!) – and it’s an Oh She Glows Recipe ❤ I also made Roasted Brussel Sprouts w Coconut Bacon,  Tempeh Mushroom Bourguignon, & Oreo Cheesecake Bites today

Toasted Pecan Parmesan – Ingredients

I always use walnuts instead

-1 Cup raw pecans

-1 large clove garlic, minced

-3 – 4 teaspoons nutritional yeast, to taste

-4 1/2 teaspoons extra virgin olive oil

-Pink himalayan salt

Salad & Dressing – Ingredients

-2 large bunches lacinato kale, stemmed

-2 large cloves garlic

-Juice from 1 large lemon

-3 – 4 Tablespoons extra virgin olive oil, to taste

-Pink himalayan salt

-Black pepper

-1 teaspoon maple syrup

-1 – 2 handfuls dried cranberries, cherries, or goji berries for garnish

Make the toasted pecan parmesan

-Preheat the oven to 300°F. Chop the pecans into pieces roughly the size of peas. Spread the pecans over a baking sheet & toast in the oven for 8 – 12 minutes, until fragrant & lightly golden

-Transfer the pecans to medium bowl, add the garlic, nutritional yeast, oil, & salt, & stir until combined. Set aside

Make the salad & dressing

-Finely chop the kale leaves into thin pieces & place in a large bowl

-In a food processor, process the garlic until minced. Add the lemon, oil, salt, & pepper, and process until combined

-Pour the dressing onto the kale & massage the dressing into the kale with your hands. Keep massaging for 30 seconds or so to ensure that everything is coated perfectly. Taste the salad & add the maple syrup

-Sprinkle the pecan parmesan all over the kale. Toss on a handful or two of dried cranberries. Cover & refrigerate for 30 – 60 minutes to soften, or serve immediately
