Ok! Last but not least . . . homemade baked beans! This is the final recipe that goes with the Summer BBQ meal I made. Served with grilled corn on the cobb, kale cesar salad, grilled brussel sprouts w tahini yogurt sauce, and BBQ tempeh strips. We loved this meal! (Not to pick favorites, but I think these baked beans were amazing)
Ingredients
-1 sweet onion, chopped
-3 cloves garlic, minced
-1 Tablespoon extra virgin olive oil
-2 15 oz cans neutral beans, drained & rinsed
-1/4 Cup tomato paste
-2 Tablespoons white vinegar
-2 Tablespoons maple syrup
-2 Tablespoons dark brown sugar
-1 Tablespoon blackstrap molasses
-2 teaspoons coconut aminos
-1 teaspoon paprika
-1/2 teaspoon ground mustard
-1/4 teaspoon black pepper
Directions
-Preheat oven to 350°F
-Heat olive oil in a pan to sauté the onion & garlic until they begin to sweat
-Now add the rest of the ingredients & stir everything around to heat through
-Transfer to a casserole dish, cover with foil, & bake for 15 minutes
-Remove from the oven & serve warm
