Carrot Zucchini Salad

Talk about a perfect summer salad. Zucchini is one of those vegetables that grows like crazy in the summer, and often times people run out of ideas as to how to cook them! This recipe is a solution for your zucchini “problem”- & something everyone would love at a BBQ.

Ingredients – Salad

-Carrots, desired amount

-Zucchini, desired amount

-Sesame seeds for topping, optional

Ingredients – Lemon Orange Tahini Dressing

-1/4 Cup Tahini

-3 cloves garlic

-Juice from 2 lemons

-Juice from 1 orange

-1/4 Cup nutritional yeast

-2 – 3 Tablespoons extra virgin olive oil

-Pink himalayan salt & black pepper to taste


-After washing your carrots & zucchini, lay them flat & shave lengthwise into thin ribbons, using a peeler

-To make the dressing: combine all of the ingredients in your food processor & blend until smooth

-In a large bowl, toss together the carrots, zucchini, & dressing. Season with salt & pepper

-Serve at room temperature or cold & top with sesame seeds
