Cashew Coconut Bites

I have been making these for Henry and we both love them. I found myself buying the GFB Bites often and realized how easy it would be to make them at home instead. Because homemade snacks are always better than store bought – and less expensive!


-1 Cup dates

-1 Cup raw cashews

-1 Cup unsweetened coconut shreds

-1/2 teaspoon vanilla

-1/4 – 1/2 teaspoon pink himalayan salt – I never usually add salt but you can

-2 Tablespoons nut butter of choice – I’ve been using sunflower butter & almond butter recently


-Process dates in food processor until crumbly

-Add coconut, cashews, vanilla, & salt & process until well blended & fine

-Add almond/peanut/sunflower butter & process until mixture starts balling up or sticking together

-Roll into bite sized balls

-Enjoy! These don’t last long in our house but I always keep them in the refrigerator
